Copycat Sweetgreen Beets Don’t Kale My Vibe Salad

As I mentioned previously in this blog post I love sweetgreen salads.  Lately I’ve been ordering Beets Don’t Kale My Vibe,  which entails wild rice, roasted beets and pickled onions, local goat cheese, roasted pecans over shredded kale with balsamic vinaigrette dressing. I decided to try to replicate this salad at home, see recipe below.

Copycat Sweetgreen Beets Don’t Kale My Vibe Salad – Serves 1

Ingredients – 

1 cooked lemon & olive oil baked chicken tender , shredded

1/4 cup of cooked  quinoa

2 Trader Joe’s Steamed & Peeled Beets, cut into quarters

1/2 cup of chopped kale

1 individual sized bag of Trader Joe’s Omega Trek Mix 

1 Tablespoon of goat cheese

2 tablespoons of balsamic dressing

Recipe –

  1. Combine shredded chicken and 1/2 tablespoon of balsamic dressing and let marinate for 15 minutes or overnight
  2. Heat your balsamic marinated chicken and quinoa in microwave for 30 seconds or until heated through
  3. Put shredded kale into a bowl
  4. Add heated chicken and quinoa, omega trek mix,  goat cheese and remaining balsamic dressing to the kale
  5. Enjoy!

Trader Joe’s Vegetable Masala Burger, 2 Ways

I love a good veggie burger and have been enjoying trying the different veggie burgers available at Trader Joe’s. I recently bought the vegetable masala burgers and thought I would share two recipes using those veggie burgers.

Vegetable Masala Burger & Kale Stuffed Sweet Potato – Serves 1

Ingredients – 

1 Trader Joe’s Vegetable Masala Burger

1/4 cup cooked sautéed kale

1 cooked sweet potato

1 slice of  Trader Joe’s Reduced Fat Sliced Lite Cheddar, cut into bite sized pieces

Recipe – 

  1. Bake sweet potato according to these directions
  2. Sautee kale following these directions
  3. Cook vegetable masala burger on stove according to package directions
  4. Once cooked through put veggie burger in a bowl and mash to create filing for sweet potato
  5. Add cooked sautéed kale to bowl with mashed veggie burger
  6. Cut cooked sweet potato in half
  7. Add veggie burger and kale mixture on top of each sweet potato half and top with lite cheddar pieces
  8. Microwave sweet potatoes with filling and cheese for 1 minute or until cheese is melted
  9. Enjoy hot!

Tips:

  1. This a great easy weekday lunch/dinner if you make sweet potato and sautéed kale ahead of time
  2. Serve this along with Copycat Sweetgreen Curry Cauliflower Bowl  for a healthy meal

Vegetable Masala and Palak Paneer Burger – Serves 1

Ingredients – 

1 Trader Joe’s Vegetable Masala Burger

1/4 cup of cooked Palak Paneer

2 pieces of original ezekiel bread

Recipe – 

  1. Cook vegetable masala burger on stove according to package directions
  2. Microwave Palak Paneer according to package directions
  3. Toast ezekiel bread in toaster oven or if you don’t have a toaster oven you can bake in the oven at  350°F for 6-8 minutes
  4. Spread Palak Paneer onto 1 piece ezekiel bread
  5. Put cooked vegetable masala burger on the other piece of  toasted ezekiel bread and top with piece of ezekiel bread with Palak Paneer

Tip:

  1. I recommend serving with sweet potato fries

2 Awesome Naan Pizza Recipes

Naan pizzas are one of my weeknight go to meals. I love that they take 10 minutes to make since really who wants to cook anything that takes more than 15 minutes to make after a long tiring day in the office! I usually try to have 1/2 the naan pizza with either soup or 1/4 cup of trader joe’s frozen pasta dishes. I bring the other half of the pizza and either soup/pasta for lunch the next day. what’s better then 2 meals in 1!

1. Veggie & Balsamic Glaze Naan Piza – Serving 1 Naan Pizza

Veggie Balsamic Glaze

Ingredients

½ cup of Trader Joe’s Miso alla Griglia

1 piece of Trader Joe’s Sliced Lite Cheddar, broken into small pieces

1 tablespoon of Trader Joe’s Balsamic Glaze

1 piece of Trader Joe’s tandoori naan

Recipe

  1. Set oven to 350 degrees
  2. Thaw the veggies by heating in the microwave for 1 minute
  3. Put piece of naan onto cookie sheet covered with tin foil
  4. Add thawed veggies on top of naan, then add cheddar pieces and top with balsamic glaze
  5. Bake for 10-12 minutes, until cheese is melted.

2. Buffalo Chicken, Kale & Black Bean Naan Piza – Serving 1 Naan Pizza

Ingredients

3 Tablespoons of Hot sauce

1/3 cup of cooked kale

1/3 cup of black beans

1 piece of Trader Joe’s Sliced Lite Cheddar, broken into small pieces

1 piece of Trader Joe’s Tandoori Naan

Recipe

  1. Marinate cooked chicken tender in hot sauce for 15 minutes or overnight
  2. Set oven to 350 degrees
  3. Put naan onto cookie sheet covered with tin foil
  4. Shred marinated chicken
  5. Top naan with chicken and remaining ingredients
  6. Bake for 10-12 minutes or until cheese is melted.

A few weeks ago I went Dessert Goals festival in Brooklyn and was introduced to Boqueria’s S’mores Churros and immediately started to think of how to turn that s’mores churro into mini churro cups, see below for recipes.

Mini S’mores Churro Cup – Makes 2 Mini Churro Cups
Ingredients – 
Trader Joe’s Mini Cinnamon Sugar Churros
1/4 cup of heavy room
1/2 cup of chocolate chips
3 mini marshmallows

Recipe – 
1. Preheat oven to 425°F
2. Bake churros according to directions on package
3. After churros are done let cool for 2 minutes and then put churros into mini muffin tin to form into cups
4. Microwave heavy cream for 30 seconds or until heated through
5, Add chocolate chips to heated heavy cream and mix throughly
6. Take grate off stove and roast marshmallows to desired doneness
7. Put chocolate ganache and marshmallows into churro cups

Mini Churro Ice Cream Cup – Makes 2 Mini Churro Cups
Ingredients – 
Trader Joe’s Mini Cinnamon Sugar Churros
1 Tablespoon of ice cream
1 Teaspoon of crumbled oreos
1 Teaspoon of rainbow sprinkles

Recipe – 
1. Preheat oven to 425°F
2. Bake churros according to directions on package
3. After churros are done let cool for 2 minutes and then put churros into mini muffin tin to form into cups
4. Add ice cream, crumbled oreos and rainbow sprinkles to churro cups
