Wafels & Dinges: Copycat Throwdown Waffle & Mini Bite

Unless you have been living under a rock you have probably heard of Wafels & Dinges one of the most popular gourmet food trucks in NYC with trucks stationed throughout the city. I first was introduced to Wafels & Dinges during a Sidewalks of New York Food Tour. Once I tried the “throwdown wafel” I was hooked. I love the combination of Belgium waffles with speculoos spread and lots of whipped cream. Today I’m going to share a copycat recipe for the throwdown and a recipe for a  “throw down” mini  bite!

Copycat Throwdown Wafel – 1 serving

Ingredients-

1 Trader Joe’s frozen Belgium waffle

1 Tablespoon of Trader Joe’s speculoos cookie butter

Dollop of whipped cream

1 Teaspoon of crushed speculoos cookies or caramel sauce

Recipe – 

1. Preheat oven to 400 degrees

2. Bake frozen Belgium waffle according to directions on box

3. Remove from oven

4. Spread speculoos spread onto  wafel and top with whipped cream and crushed speculoos cookies and caramel.

Throwdown Mini Bite –  1 Bite

Ingredients-

1 Trader Joe’s frozen Belgium waffle

1 Tablespoon of Trader Joe’s speculoos cookie butter

Dollop of whipped cream

1 Teaspoon of crushed speculoos cookies or caramel sauce

Recipe – 

1. Preheat oven to 400 degrees

2. Bake frozen Belgium waffle according to directions on box

3. Remove from oven and let cool for a few minutes

4. When waffle is cooled enough that you can touch break off a small piece and put into mini muffin tin cup to get waffle to form cup shape. I didn’t have to bake, but if that doesn’t work for you preheat oven to 350 degrees and bake for 8 – 10 minutes.

5. Put tablespoon of speculoos spread into  waffle cup and top with whipped cream and crushed speculoos cookies and caramel.
