3 Awesome Taco Recipes

Tacos #2

1.  Roasted Curry Chickpea Tacos –
Serving size: 2 Tacos

Ingredients – 
1/4 cup garbanzo beans
1/2 Tablespoon curry powder
1/2 Tablespoon olive oil
2 Tablespoons sautéed Trader Joe’s fire roasted peppers & onions (optional)
2 tortillas
Optional Toppings:
Avocado
Radish
Cilantro

Recipe – 
1.  Preheat oven to 425°F
2.  Follow these directions to make roasted curry chickpeas
3. While the chickpeas are cooking prepare your toppings: sauté peppers, chop avocado, cilantro, radish, etc
4. Once roasted chickpeas are done prepare your tortillas, microwave with a damp paper towel for 1 minute or until tortillas are soft
5. Stuff tortillas with your roasted chickpeas and other toppings
6. Enjoy warm!

2.  BBQ Chicken Tacos –
Serving size: 2 Tacos

Ingredients – 
1 cooked Lemon & Olive Oil Baked Chicken Tender
1 Tablespoon of BBQ Sauce, I like Trader Joe’s All Natural BBQ Sauce
2 Tablespoons sautéed Trader Joe’s fire roasted peppers & onions (optional)
2 tortillas
Optional Toppings:
Avocado
Radish
Cilantro

Recipe – 
1. Preheat oven to  425°F
2. Bake Lemon & Olive Oil Baked Chicken Tender
3. While the chicken is baking prepare your toppings: sauté peppers, chop avocado, cilantro, radish, etc
4. Once chicken is done prepare your tortillas, microwave with a damp paper towel for 1 minute or until tortillas are soft
5. Shred baked chicken tender and mix in a bowl with BBQ sauce
6. Stuff tortillas with your shredded BBQ chicken & other toppings
7. Enjoy warm!

3.  Honey Walnut Shrimp Tacos –
Serving size: 2 Tacos

1/4 cup of Trader Joe’s Honey Walnut Shrimp 
2 Tablespoons sautéed Trader Joe’s fire roasted peppers & onions (optional)
2 tortillas
Optional Toppings:
Avocado
Radish
Cilantro

Recipe – 
1. Cook shrimp according to directions on package
2. Add fire roasted peppers & onions to the sauté pan with your shrimp
3. While the shrimp & peppers are sautéing prepare your other toppings: chop avocado, cilantro, radish, etc
4. Once shrimp & peppers is done prepare your tortillas, microwave with a damp paper towel for 1 minute or until tortillas are soft
5. Stuff tortillas with your honey walnut shrimp & other toppings
6. Enjoy warm!

Wafels & Dinges: Copycat Throwdown Waffle & Mini Bite

Unless you have been living under a rock you have probably heard of Wafels & Dinges one of the most popular gourmet food trucks in NYC with trucks stationed throughout the city. I first was introduced to Wafels & Dinges during a Sidewalks of New York Food Tour. Once I tried the “throwdown wafel” I was hooked. I love the combination of Belgium waffles with speculoos spread and lots of whipped cream. Today I’m going to share a copycat recipe for the throwdown and a recipe for a  “throw down” mini  bite!

Copycat Throwdown Wafel – 1 serving

Ingredients-

1 Trader Joe’s frozen Belgium waffle

1 Tablespoon of Trader Joe’s speculoos cookie butter

Dollop of whipped cream

1 Teaspoon of crushed speculoos cookies or caramel sauce

Recipe – 

1. Preheat oven to 400 degrees

2. Bake frozen Belgium waffle according to directions on box

3. Remove from oven

4. Spread speculoos spread onto  wafel and top with whipped cream and crushed speculoos cookies and caramel.

Throwdown Mini Bite –  1 Bite

Ingredients-

1 Trader Joe’s frozen Belgium waffle

1 Tablespoon of Trader Joe’s speculoos cookie butter

Dollop of whipped cream

1 Teaspoon of crushed speculoos cookies or caramel sauce

Recipe – 

1. Preheat oven to 400 degrees

2. Bake frozen Belgium waffle according to directions on box

3. Remove from oven and let cool for a few minutes

4. When waffle is cooled enough that you can touch break off a small piece and put into mini muffin tin cup to get waffle to form cup shape. I didn’t have to bake, but if that doesn’t work for you preheat oven to 350 degrees and bake for 8 – 10 minutes.

5. Put tablespoon of speculoos spread into  waffle cup and top with whipped cream and crushed speculoos cookies and caramel.

It’s no secret that i’m obsessed with all things Trader Joe’s so i’ve decided to start a new segment on the blog where i’ll share different Trader Joe’s products and multiple recipes using that product. Today i’m featuring Honey Walnut Shrimp, which I used for thai cauliflower rice stir fry and lettuce wraps.

Honey Walnut Shrimp Thai Cauliflower Rice – 1 serving

Ingredients-

1/2 cup of  cooked cauliflower rice

2 tablespoons of Thai fried rice

1/4 cup of Trader Joe’s Honey Walnut Shrimp 

1/4 cup of cooked broccoli

Instructions-

1. Cook shrimp according to directions on package

2. While shrimp is cooking microwave frozen broccoli for 1 minute or until heated through

3. Put the cooked cauliflower rice and thai fried rice into a bowl and microwave for 1 minute & 30 seconds or until heated through

4. Combine the cauliflower rice mixture, with broccoli and cooked shrimp. Top with Honey sauce and walnuts.

Honey Walnut Shrimp Lettuce Wraps – Makes 4 lettuce wraps

Ingredients-

1/2 cup of cooked cauliflower rice

2 tablespoons of Thai fried rice

1/4 cup of Trader Joe’s Honey Walnut Shrimp

1/4 cup of cooked broccoli

1/4 cup of shredded carrots

4 romaine lettuce hearts

Instructions-

1. Cook shrimp according to directions on package

2. While shrimp is cooking microwave frozen broccoli  for 1 minute or until heated through

3. Put the cooked cauliflower rice,  thai fried rice & shredded carrots into a bowl and microwave for 1 minute & 30 seconds or until heated through

4. Combine the Thai  cauliflower rice, broccoli and cooked shrimp. Add Honey sauce and walnuts and mix throughly

5. Put the shrimp and rice mixture into the romaine lettuce hearts
