Italian Meals & Bites

Today I wanted to share some easy Italian meals & bites. The star of these recipes is Trader Joe’s Arrabiata sauce, which you will see used in a majority of the recipes below.

Spinach, kidney bean, tomato & quinoa soup, recipe from: Damn Delicious
I served as soup shooters in mini cordials with piece of garlic bread
Spinach, kidney bean, tomato & quinoa bites – Makes 12 bites 
Ingredients – 
1 container of crescent rolls
Recipe – 
1. Preheat oven to 350 degrees
2. spray mini muffin tin with canola oil
3. Open crescent rolls & separate into triangles.
4. Cut each triangle in 1/2
5. Press crescent roll triangle into separate muffin cups
6. Bake for 12 minutes
7. Take out from oven and let cool
8. Use utensil handle and create crater into each crescent roll cup
9. Put heated spinach, kidney bean, tomato & quinoa soup in each crescent roll cup

Cauliflower Parmesan Over Spaghetti Squash -Makes 1 serving

Ingredients – 

1/4 Cup Cauliflower florets, I used Trader Joe’s Grilled Cauliflower

2 Tablespoons of Trader Joe’s Arrabiata  sauce

2 Tablespoons of Mozzarella Cheese

1 Cup of cooked spaghetti squash, I use this recipe

 

Recipe- 

  1. Preheat oven to 350 degrees
  2. Put Cauliflower, sauce & mozzarella cheese in baking dish
  3. Bake for 10 -12 minutes
  4. Serve over heated spaghetti squash

Cauliflower Spaghetti Squash Crescent Roll Bites – 12 bites

Ingredients – 

1 container of crescent rolls

1/2 Cup of Cauliflower Parmesan,  see recipe above

Recipe – 

1. Preheat oven to 350 degrees
2. spray mini muffin tin with canola oil
3. Open crescent rolls & separate into triangles.
4. Cut each triangle in 1/2
5. Press crescent roll triangle into separate muffin cups
6. Bake for 12 minutes
7. Take out from oven and let cool
8. Use utensil handle and create crater into each crescent roll cup
9. Add tablespoon of cooked cauliflower parmesan into each crescent roll cup

Turkey Meatball Cups – 12 Bites

Ingredients – 

1 container of crescent rolls

6 cooked mini turkey meatballs, I used this recipe, but you can buy pre made as well

2 Tablespoons of Trader Joe’s Arrabiata  sauce

2 Tablespoons of Mozzarella cheese

Recipe – 

1. Preheat oven to 350 degrees
2. spray mini muffin tin with canola oil
3. Open crescent rolls & separate into triangles.
4. Cut each triangle in 1/2
5. Press crescent roll triangle into separate muffin cups
6. Bake for 12 minutes
7. Take out from oven and let cool
8. Use utensil handle and create crater into each crescent roll cup
9. Add cooked mini turkey meatball and mozzarella cheese to each cup
10. Bake at 350 degrees for an additional 8-12 minutes until cheese is melted.
Vegetable Turkey Lasagna – Serves 1
Ingredients – 
2 slices of eggplant slices, I used Trader Joe’s Misto alla Griglia
2 Tablespoons of cooked ground turkey
2 Tablespoons of Trader Joe’s Arrabiata sauce
2 Tablespoons of Mozzarella cheese
Recipe –
1. Preheat oven to 350 degrees
2. Put one eggplant  followed by ground turkey then top with 2nd eggplant slice, Trader Joe’s Arrabiata sauce and Mozzarella cheese
3. Bake for 12 minutes or until cheese in melted and eggplant is heated through

Tip – I recommend making these bites in Garlic Crescent Roll Cups to kick the flavor up a notch.
