Asian Inspired Bites & Dishes

Today, I wanted to share some yummy Asian inspired dishes and bites. Last weekend during the snowstorm I did a ton of meal prep, which saved me valuable time during the week. The first step of my meal prep was roasting veggies, I used  this recipe. Then  I made a ramen vegetable soup and Asian style quinoa.

 

 

Ramen Noodle Vegetable Soup –       Makes 4 servings, serving size 1/2 cup

Ingredients –

1 8 oz container of vegetable  stock

2 Tablespoons of soy sauce

1 Tablespoon of minced ginger

1 Teaspoon of toasted sesame oil

Roasted veggies: I used broccoli, bell peppers, sautéed kale, frozen edemame & frozen corn

5 Trader Joe’s chicken cilantro mini wantons

Chicken flavor ramen noodles, don’t use chicken flavor packet if you are trying to make vegetarian.

Recipe-

1. Put large stock pot on stove, add minced ginger and heat for one minute.

2. Add vegetable stock, soy sauce & toasted sesame oil and bring to a boil.

3. Add vegetables and wantons and cook for 10 minutes and take off stove.

4. Cook ramen noodles according to package directions. I added chicken flavoring packet.

5. Add cooked ramen to vegetable soup.

6. Serve hot & enjoy!

Ramen noodles in scallion pancake cups – makes 3 scallion pancake cups

Ingredients-

1 Trader Joe’s scallion pancake  
1 Tablespoon of vegetable ramen soup, see recipe above

Garnish: chopped green onion

Recipe-

1. Preheat oven to 350 degrees

2. Cook scallion pancake on stove according to package directions.

3.  Use 1″ round cookie cutter to cut hot scallion pancake into  a 1″ circle.

4. Press 1″ scallion pancake circle into mini muffin tin cup

5. Bake scallion pancake cup for 12 minutes.

6. Add heated ramen noodle soup to scallion pancake cup

7. Garnish with chopped green onion & serve hot

 

Seafood Blend in  Green Curry Sauce 

Makes  1 Serving

Ingredients –

Seafood Blend in  Green Curry Sauce 

1/2 cup of Trader Joe’s Seafood Blend

2 Tablespoons of Trader Joe’s green curry

1 Teaspoon of coconut oil

Asian Style Quinoa 

Full bag of Trader Joe’s fully cooked quinoa

1/2 cup of roasted veggies, I mentioned above

3 Tablepoons Trader Joe’s Peanut Satay Sauce

Recipe –

Seafood in curry sauce 

1. Put seafood blend and green curry sauce in a bag and marinate anywhere from   30 minutes – overnight.

2. Add coconut oil to pan and heat

3. Once hot add seafood mixture

4. Cook seafood for 4 minutes and add roasted veggies.

5. Cook seafood and veggies until heated through.

Asian Style Quinoa

1. Heat quinoa in microwave according to package directions.

2. Add roasted veggies mentioned above to a pan and heat.

3. Once veggies are cooked add quinoa and peanut satay sauce.

4. Add quinoa mixture to cooked seafood and veggies and serve.

Green Curry Seafood Blend in Scallion Pancake Cup – Makes 3 scallion pancake cups
Ingredients – 

1 Trader Joe’s scallion pancake

1 Tablespoon cooked green curry  seafood blend mixture

Garnish – 1 Teaspoon chopped green onion 

Recipe – 

1. Preheat oven to 350 degrees

2. Cook scallion pancake according to package directions.

3. Use 1″ round cookie cutter to cut hot scallion pancake into a 1″ circle.

4. Press 1″ scallion pancake circle into mini muffin tin cup

5. Bake scallion pancake cup for 12 minutes

6. Add heated green curry seafood blend mixture and if desired add green onion to garnish.

 

Peanut Satay Ground Turkey Lettuce Wraps  – Makes 1 serving
Ingredients- 

1 Teaspoon coconut oil

1/2 teaspoon minced ginger

1/2 Cup ground turkey, I used leftover  ground turkey that was precooked. 

1/4 Cup  roasted veggies, mentioned above

1/2 Cup cooked Asian Style Quinoa, see recipe above

2 Tablespoons Trader Joe’s Peanut Satay Sauce

1 Teaspoon chopped green onion

3 leaves of romaine lettuce hearts

Recipe- 

1. Add minced ginger and coconut oil to pan and heat for 1 minute

2. Add ground turkey and vegetables to pan. If using precooked ground turkey cook for about 5 minutes or until heated through. If using raw ground turkey cook for around 8 minutes or until browned.

3. Add quinoa mixture and peanut sauce and cook for 2 minutes.

4. Once heated through take off stove

5. Wash lettuce leaves

6. Add ground turkey mixture to lettuce leaves, garnish with green onion and serve

Ground Turkey Scallion Pancake Cups – Makes 3 scallion pancake cups 
Ingredients 

1 Trader Joe’s Scallion Pancake

1 Tablespoon ground turkey mixture, see recipe above

Garnish: chopped green onion

Recipe-

1. Preheat oven to 350 degrees
