Super Bowl Bites

 

With the Super Bowl one week away I thought would share some recipe, drink and decor inspiration for anyone hosting a Super Bowl party or looking for something fun to bring a party you are attending.

I personally believe a Super Bowl party is the perfect party to host if you don’t enjoy cooking because everything can be pre-made! order a pizza, buy some chicken wings, chips, salsa and guac and of course beer and you have yourself a party!  If you want to kick your party up a notch and impress your friends with some fun and delicious bites that look fancy and gourmet, but are super easy, the recipes I have featured below are for you. I have also included some cocktail ideas if you are looking for something fun and different to serve. Stay tuned for an upcoming blog post where I will show you how I used the ingredients featured in the bites below in other dishes as well.

Bites- 

Savory:

Spinach & Artichoke Bites – 16 mini cups

Ingredients-

1 package of crescent diner rolls

1 package of Trader Joe’s Frozen Spinach & Artichoke Dip

Recipe –

  1. Preheat oven to 350 degrees
  2. spray mini muffin tin with canola oil
  3. Open crescent rolls & separate into triangles.
  4. Cut each triangle in 1/2
  5. Press crescent roll triangle into separate muffin cups.  You should have 16 crescent roll mini muffins.
  6. Microwave spinach and artichoke dip according to package directions
  7. Put a tablespoon of microwaved dip into each muffin cup.
  8. Bake for 12 minutes
  9. Let cool & enjoy!

Margherita Pizza Bites – 16 mini cups

Ingredients-

1 Package of crescent  dinner rolls

Container of cherry tomatoes

1 cup Mozzarella cheese

1 Tablespoon of Olive Oil

1/2 clove of garlic or 1/2 teaspoon of garlic powder

1/2 Tablespoon finely chopped Basil

Recipe –

  1. Preheat oven to 350 degrees
  2. spray mini muffin tin with canola oil
  3. Open crescent rolls & separate into triangles.
  4. Cut each triangle in 1/2
  5. Press crescent roll triangle into each mini muffin cup.  You should have 16 crescent roll mini muffins.
  6. Cut cherry tomatoes in quarters
  7. Put tomatoes in bowl with olive oil and garlic/garlic powder and mix throughly
  8. Put marinated tomatoes in crescent roll cup and add 1 tablespoon of mozzarella cheese on top of each cup.
  9. Bake for 12 minutes
  10. Remove from oven & let cool
  11. Garnish each cup with basil and serve

Buffalo Chicken Bites – 16 mini cups

Ingredients-

1 package of crescent  dinner rolls

1 cup of shredded cooked chicken, either store bought rotisserie chicken or make your own chicken & shred.  I bought skinless boneless chicken tenders and used this recipe to make my chicken.

1/4 cup Hot Sauce

Garnish options: green onion, blue cheese

Recipe –

1. Put shredded chicken in ziplock bag and add hot sauce. Marinate for 30 minutes or overnight. If you are short on time feel free to skip this step, it just gives the chicken more of the buffalo sauce flavor.

2. Preheat oven to 350 degrees

3. Spray mini muffin tin with canola oil

4. Open crescent rolls & separate into triangles.

5. Cut each triangle in 1/2

6. Press crescent roll triangle into each mini muffin cup.  You should have 16 crescent roll mini muffins.

7. Put a tablespoon of chicken with hot sauce mixture into each crescent roll cup

8. Bake for 12 minutes

9. Remove from oven, let cool

10. Garnish with green onions and or blue cheese and serve.

Chili in Cornbread Cup – 12 mini cups

Ingredients –

1 Package of Jiffy Cornbread Mix

Chili – I used this Chipotle Turkey Chili recipe

Recipe – 

  1. Make chili according to directions 
  2. Preheat oven to 400 degrees
  3. Make cornbread according to directions
  4. Put tablespoon of cornbread mixture into each mini muffin cup
  5. Bake cornbread cups for 12 minutes
  6. Use utensil handle to create crater in center of each muffin. Let muffins cool for 10-15 minutes before removing from mini muffin tin.
  7. Put 1 tablespoon of heated chili mixture into each muffin
  8. Garnish with sour cream and shredded Mexican cheese. Serve hot.

Brownie cups with white chocolate ganache and shredded coconut  – 16 mini cups

Ingredients –

1 package of brownie mix & ingredients listed on box

1/4 cup of heavy cream

1/2 cup of white chocolate chips

1/2 cup of shredded coconut

green food coloring

Recipe-

Brownie Cups –

  1. Preheat oven to 350 degrees
  2. Spray mini muffin tin with canola oil
  3. Make brownies according to directions on box
  4. put 1 tablespoon of brownie batter in each mini muffin cup
  5. Bake at 350 degrees for 25 minutes or until toothpick comes out clean
  6. Use utensil handle to create crater in center of each brownie cup.  Let brownie cups cool for 10-15 minutes before removing.
  7. Put tablespoon of white chocolate ganache (see recipe below) into each brownie cup
  8. Top with shredded coconut

White Chocolate Ganache Filling-

  1. Heat heavy cream in pot on stove until it starts to boil
  2. Take off heat and add white chocolate chips
  3. Mix heavy cream & white chocolate chips until smooth
  4. Add green food coloring until you reach desired green color

Green Shredded Coconut – Put shredded coconut and green food coloring in zip lock bag and mix until you get desired shade of green.

Party Tips:

I recommend making your cups ahead of time. These can be made up to a month in advance and frozen. Same goes for chili and  chicken, if you are cooking the chicken for the buffalo chicken yourself. This way  the day before your party you can put your cups, chili, chicken in refrigerator to defrost and the day of your party you can make your other fillings, add fillings to pre made cups and bake in oven at 350 for 12 minutes.
